Job Description

Position Summary:

  

Completely responsible for the bakery program. To creatively and energetically ensure beautiful and superior quality baked goods, whether produced in-house or out-sourced. Ensures that all pastry preparation and plate presentation is to established specifications. Directly responsible for the entire kitchen operation in Exec. Sous Chef or Chef de Cuisine’s absence.

    

Responsibilities include:

  
     
  • Responsible  for organization and cleanliness of pastry preparation as to maintaining  established par stocks, prep levels, efficient production, appearance and  health code standards. Ensure that all food preparation supplies are  properly ordered, received, handled and stored.

  • Responsible  for the kitchen in a chef or sous chef's absence. Must be able to stand  for long periods of time.
  •  
    
     
  • Aids or  assists wherever needed in any of Hotel Valley Ho’s food  preparation outlets to ensure timely, smooth quality service. Ensures that  all stations are properly staffed. Maintains communication with kitchen  management, Catering and Dining Room Management concerning upcoming events  and special projects. Develops positive working relations with all other  departments (stewarding, maintenance, rooms division, purchasing, et al.).

  • Maintain  consistency of product with great attention to food quality, taste and  presentation. Aids in the concept, creativity, revision and implementation  of all menus. Develops seasonal desserts with the emphasis on flavor.

  • Assist Exec. Chef,  Exec. Sous Chef & Chef de Cuisine in administrative function  pertaining to payroll, scheduling, recruiting and the control of food and  labor costs.    
  •  
    
     
  • Maintain  high employee morale and a good reliable staff; to recruit motivate and  train cooks and utility persons. To organize an efficient flow of  production and maintain minimum, but adequate staffing.
  •  
    
     
  • Ensure  that high standards of dress and personal hygiene are maintained by all  employees. Sets the example as it related to speed, cleanliness and  accuracy.
  •  
    
     
  • Ensure  proper maintenance and care is exhibited by all employees toward equipment  furnished by Hotel Valley Ho.
  •  
    
     
  • Attends  and participates in BEO Meetings, Mid-Manager and departmental meetings.
  •  
    
     
  • Always  project a positive attitude; to embrace and enforce Hotel Valley Ho  guidelines and procedures. Able to make quick, intelligent decisions.
  •  
    
     
  • May  be called upon to work evening or split shifts if business dictates.
  •  
    
     
  • Responsible  for any other duties as assigned by Exec. Sous Chef or Chef de Cuisine.
  •

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he/she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.

  

  
     
  • Must  be in good physical condition, able to lift 75 lbs, and carry 50 lbs.
  •  
  

  
     
  • Required  to stand for long periods of time in one area near hot equipment (ovens,  burners, etc.).
  •  
    
     
  • Must  be able to work on slippery surfaces and under pressure.
  •  
    
     
  • Should  have prior experience in a kitchen management position.
  •  
    
     
  • Must  have good communication skills: able to manage and motivate people.
  •  
    
     
  • Must  be responsible, insightful, organized and self motivated.
  •  
    

Uniform Requirements

  
     
  • White,  double breasted chef's jacket, black and white checkered pants, black  chef's hat and apron, name tag, all to be provided by the company.
  •  
    
     
  • Sturdy,  polished black leather shoes, to be provided by the employee.
  •  
    

County Legal Requirements

  
     
  • Must possess a  valid Maricopa County Health Dept. Food Handlers card to be kept on file  in Human Resources.
  •  
  • Must have  completed County & State Liquor training. 
  •
